Ellen Bennett's Speedy Cranberry Sauce Recipe

1, 12 oz. bag of fresh cranberries

2 tablespoons of brown sugar

1 large pinch of kosher salt

2 oranges + their pulp and zest (but no pith)

Cut 2 large navel oranges in half and hand squeeze them into a medium saucepan

Add fresh cranberries to pan

Add salt

Add brown sugar

Microplane zest of 1 orange into pan

Add slivers of orange zest into pan (no pith!)

Let cook on medium for 10 minutes and taste as you go—let it bubble and get juicy

Let cook and reduce for another 10 minutes aromatic and sweet

Garnish with a little more orange zest and serve
