Karen's Stuffing Recipe

Ingredients:

1 box / 4 sleeves of full fat Ritz Crackers

6 handfuls of Rice Krispies cereal

½ cup of rolled oats

1 onion, diced

1 egg, whisked

½ cup to ¾ cup chicken broth

2 tablespoons canola oil

½ teaspoon of garlic powder

½ teaspoon of kosher salt & pepper plus more to taste

Instructions:

Preheat oven to 350 degrees

Dice and sweat the onion in the canola oil for 5-8 minutes until it is translucent

For the dry ingredients:
In a bowl, crush the 4 sleeves of Ritz Crackers
Add 6, semi-crushed handfuls of the Rice Krispies
Sprinkle in the rolled oats
Sprinkle in garlic powder, salt and pepper

Add to the dry ingredients:
Add the sautéed onion to the bowl
Add the whisked egg to the bowl
Mix to combine with your hands and add chicken broth

Continue to add broth to make mixture relatively moist—stuffing should not be a dry texture

To cook:

Lay out a sheet of aluminum foil and drop stuffing mixture into the center

Gather up the sides of the foil to make a stuffing “ball,”seal up the top and sides so it is like a round foil packet

Place in oven for 35-45 minutes

If you like you stuffing crispy on top, you can open up foil ball towards the end in order to get top of the stuffing browned

Chicory Caesar Salad

Ingredients
1 oil-packed anchovy fillets
1/2 garlic clove, finely chopped
1/4 cup coarsely chopped parsley
1/3 cup extra-virgin olive oil

1/2 cup fresh lemon juice

2 tsp. kosher salt

1 lb. mixed chicories (such as endive, frisée, escarole, and/or radicchio), torn into large pieces
1 oz. Pecorino Romano
Freshly ground black pepper

Instructions:

Mash anchovies and garlic on a cutting board with the side of a chef’s knife until you’ve created a paste. Transfer paste to a large bowl and add parsley, oil, lemon juice, and salt and mix well to combine. Add chicories to bowl with dressing and toss to coat.

Transfer salad to a platter and shave Pecorino over. Season with pepper.
